- red onion, minced
- 1/4 to 1/2 ripe Hass avocado, chopped, per person
- spinach, arugula or mixed greens
- sun-dried tomatoes, chopped
- pomegranate arils (about 1/6th of a typical fruit per person)
- hard-boiled egg, chopped
- your favorite vinaigrette
Combine everything in a salad bowl and toss well.
