Leek-Apple-Walnut Salad

Adapted from Latviešu ēdieni
Serves 2

• 1 leek, sliced thinly
• 1 small Granny Smith or other tart apple, cored, sliced into chunks
• 1 tsp horseradish
• 4 radishes, chopped
• 1/4 c walnuts, toasted and chopped
• 1 hard-boiled egg, diced (optional)
• dash of sugar
• pinch of salt
• sour cream¹

Combine all ingredients in a bowl. Add enough sour cream to just bring the salad together.

Notes:

1. You can also use mayonnaise or a combination of the two.
