Serves 2
- 1 c grated carrot
- 3 green onions, thinly sliced
- 4 c grated green cabbage
- 1 1/2 tbsp seasoned rice vinegar
- 2 tsp creamy peanut butter
- 1 tbsp soy sauce
- 2 tsp lime juice
- 2 tsp canola oil
- 1/2 tsp sambal oelek (chile paste) or more, to taste
- 2 tbsp chopped peanuts (optional)
Combine carrot, green onions, cabbage and peanuts, if using, in a medium bowl. Whisk together remaining ingredients in a small bowl and pour over the vegetables. Toss well to combine.
