Slow Cooker Borscht

This one’s for Deb, a friend of mine up in Seattle. :)

It’s been super-windy and rather cold all this last week. After spending some time in the morning listening to the wind howl about the eaves and against the windows, we decided yesterday that soup was definitely in order for dinner. We also wanted to get stuff done, so anything requiring a lot of time was out. Enter the slow cooker. But what to make?

We had some beets that were harvested in Grantsville that needed to be used up. Now, naturally we could have done…

On Baked Milk and Slow Cookers

This is an update to making baked milk from my original post on Ryazhenka.

As I’ve mentioned here before, we recently obtained a slow cooker. We’ve been happily slow-cooking our way through a couple of cookbooks, trying this or that recipe on a whim and generally being pleased with the results. There’ve been a few duds, like the French Onion Soup That Wasn’t, but by and large, the slow cooker has turned out to be an excellent decision.

Now that we’re more experienced with it, we’ve been looking at some of our own recipes and considering whether…

Slow Cooker Chili

I promise it won’t be all slow cookers all the time, but I do have this nifty new toy. :D We’re working on adapting some of our favorite Latvian recipes to it, like plovs and šķovēti kāposti, which we think are very well-suited. (The plovs was made to my father-in-law’s recipe, which is braised in a sealed roasting pan in the oven. It worked well but there’s still some testing to do before I write the final recipe.)

One thing I really wanted to do with our new slow cooker was make a real chili. I’ve tried before on…

Slow Cooked Pintos Picadillo

Recently, we gave in to temptation after we cashed in our change jar and bought a handsome new 5qt programmable slow cooker. We’d been talking about it for several months and after talking it over with a close friend of ours who loves her slow cooker, we decided to do it.

To go along with it, she recommended “Fresh from the Vegetarian Slow Cooker: 200 Recipes for Healthy and Hearty One-Pot Meals That Are Ready When You Are” by Robin Robertson. We had a lot to learn and while I know meat dishes are incredibly popular…

Flor de Calabaza Sopa (Squash Blossom Soup)

You know how I mentioned in Spicy Tortilla Soup that there was a squash blossom soup in the same movie that I wanted to make?

I remembered on Friday to ask my local farmer if he still had any squash blossoms. It’s getting really late in the season, but he still had some left. (He also told me that during the height of the season, he was filling and selling 350 bags per day. Per day! Each bag contains between 3 and 4 dozen blossoms and sells wholesale for $2 — retail is between $2.50 (at the ethnic…

Rice Cooker Pasta

I was feeling lazy the other day and didn’t feel like cooking. We’d been cooking up a storm with a bunch of experiments earlier in the week, so I wasn’t in the mood to cook. I did, however, want to try this recipe for pasta in a rice cooker that a friend of mine passed on.

She recommended that we use rice pasta because it can stand up to a lot of cooking without losing an al dente texture, so we picked up a little bag at Winco to try it. It turned out pretty well! The rice…

Simple, Fast Pizza Sauce

Boy, I just finished one of the best pizzas we’ve ever made. Talk about good! I wish I could share a photo of this delectable beast of a pizza, but alas, it was not meant to be.

Here’s what we had: A homemade whole wheat rosemary pizza crust with a red wine tomato sauce, slices of fresh ghost eggplant from our garden lightly fried, fresh tomato slices from the farmer’s market, sauteed onions, bacon, fresh basil and slices of fresh mozzarella. Top that off with some sliced olives and there you have it. A damn good pizza.

Now…
