Daring Cooks Challenge: Salmon en Croute
The 2009 Daring Cooks challenge was hosted by Simone of Junglefrog Cooking. Simone chose Salmon en Croute (or alternative recipes for Beef Wellington or Vegetable en Croute) from Good Food Online.
Overall, this dish came out very well. The pastry-wrapped fish is not really to my taste, however, so I wouldn’t opt to make this again. I would much prefer a simple broiled salmon with butter and lemon to this. But, if it appeals to you, I can vouch that it is quite good.

Daring Cooks Challenge: Dessert Wontons
For this challenge, I gritted my teeth, dug up the candy/frying thermometer, my small pot (to limit the damage done to my oil bottle if things went badly) and… completed the challenge! It wasn’t so bad, really. The thermometer helped a lot (duh.).
The wontons could have any filling we could think up, any shape, you name it.
Now that was fun. I like creative challenges like this that allow me to play around with something on a theme. So my husband and I sat down at the table and started putting together all sorts of little odd packets.

Daring Cooks Challenge: Vietnamese Pho
The October 2009 Daring Cooks’ challenge was brought to us by Jaden of the blog Steamy Kitchen. The recipes are from her new cookbook, The Steamy Kitchen Cookbook.
Whee! What a great excuse to make chicken stock! The details of that are in another post, but what I wound up with were 3 quarts of dark amber roasted chicken goodness. Good stock is essential as pho is very simple though endlessly variable.

Daring Kitchen September Challenge: Dosas
It’s September 14th, do you know what day it is? It’s the day for Daring Cooks’ Challenges to be unveiled!
This month, we were challenged to cook a fully vegan meal, meaning no animal products whatsoever. Debyi of Healthy Vegan Kitchen selected Indian Dosas from reFresh: Contemporary Vegan Recipes From the Award Winning Fresh Restaurants by Ruth Tal.

Daring Kitchen: Seafood & Artichoke Paella
Talk about a challenge. I honestly wasn’t expecting things to go the way they did. From failed mayonnaise to substituting half the main ingredients, at this point I couldn’t tell you if I completed the challenge or not.
So what am I on about? It’s the 14th of the month, which means it’s time for a Daring Cooks challenge!
